Ebbio

Monteriggioni, Tuscany, Italy

An old 13th-century farmhouse lies in the midst of an evergreen forest overlooking the Elsa Valley between Siena and Florence. Here you can gaze out over the rolling Tuscan hills through the many windows, lure the scent of lavender and hay into the spacious, individually designed rooms and watch birds and butterflies fly by.

Spectacular sunsets let the day end in the most beautiful colors from the panorama terrace. On the ground floor there is a common room with a fireplace that is regularly used for yoga, meditation and art exhibitions. Those who feel like going outside can not only enjoy a good book in one of the hammocks or on the sunbeds, but also enjoy delicious vegetarian organic dishes with seasonal ingredients from our own cultivation in the shade of the pergola.

On numerous hiking trails, through forest and meadows and past natural lakes and waterfalls, you can experience pure nature here. Wine and olive oil tastings as well as guided herb hikes are also possible. The medieval village of Monteriggioni is only 2 kilometers away and can be reached comfortably and emission-free on foot.

Francesca Bevilacqua bought the Ebbio in the 1980s. She discovered it during a hike in the Elsa Valley and felt magically drawn to it. At the end of a gravel path, she finally reached the place that from now on was not only to be her own home, but also a place of lasting security, culinary delights and relaxation for people from all over the world. Francesca runs her guest house together with her daughter Sibilla.

Sustainable

ArchitectureThe beautiful, sustainably renovated old farmhouse originally dates from the 13th century. The thick walls and terracotta tiles provide refreshing coolness in summer and pleasant warmth in winter. All ten rooms have been individually designed with great attention to detail in warm earth tones. With a stylish combination of handmade textiles, antique and upcycled furniture and selected art, the hosts have created an ideal balance between simplicity, comfort and elegance.

FoodThe hosts Sibilla, Francesca, Nyshi, Bardhyl, Jane and Elkabira are convinced: a healthy diet is the best medicine. For them, fresh, seasonal organic food prepared with love is the be-all and end-all for real well-being. Most of the ingredients used for the vegetarian food at Ebbio come from our own, organically certified cultivation. In the kitchen creations, Mediterranean and traditional Tuscan recipes are garnished with international and Far Eastern ideas - and are guaranteed to be packed with all the nutrients and vital substances that your body needs for a regenerating holiday. Cooking workshops, herb hikes, wine and olive oil tastings are offered regularly.

The Ebbio is a family-run house in which the hosts also live. Not all family members are related by blood, but they are all soul mates who care about their home and country, geese and chickens, horses and donkeys, cats, dogs, butterflies and insects. Wwoofers also come here regularly to help with the organic management of the farm. In addition to olive groves and vines, this also includes fruit trees, vegetable and herb cultivation. Here, young people learn first-hand how sustainable agriculture works in harmony with nature.

EnvironmentSustainability is lived at Ebbio - by the hosts themselves, in the fields and with the guests. The certified, regenerative organic farm not only produces most of the food for residents and guests itself, but also uses solar modules to heat the service water. In winter, our own biogas plant supplies the necessary energy to keep the old walls pleasantly warm. The consumption of resources is therefore very low for a tourist business. If there is food waste, it is fed to the animals, which in turn provide valuable fertilizer for the plants. Closing cycles and conserving resources is a top priority at Ebbio - and in a paradisiacal setting.

Well-BeingReconnect with nature – this is literally possible in Ebbio. If you feel like it, you can help the hosts with the field work and start the day with dirty hands and a big grin on your face. In cooperation with local providers, there is the possibility to book various massages and wellness offers. The farmhouse, which has a spacious common area for group activities, is also the perfect place for group retreats of up to 25 people.
